Eggplant – 2 (500g)

Onion - 1 finely chopped

Tomato - 2 finely chopped

Green chili - 2-3 finely chopped

Garlic - take 5-6 cloves

take asafetida as per taste

Rai - 1/2 tsp

Cumin - 1/2 tsp

Red chili powder - 1/3 tsp

Green coriander - 50g finely chopped

Turmeric Powder - 1/4 tsp

Garam Masala - 1/2 tsp

Coriander Powder - 1 tsp

Salt - as per taste

Oil - take for tempering

So first of all we have to wash the brinjal and put 1-2 cloves of garlic in it by making small holes with a knife. Now to make Baingan Bharta, first you have to fry the brinjal. How


If brinjal has a fire of hum uaple (kanda) or coal, then it is even better if it is not, then you should fry it on the gas itself and fry it well from all sides. The top layer of it starts coming off when you understand that the brinjal is roasted and when the brinjals are fried well, after cooling a little, peel them.


And with the help of a spoon, mash them on a plate or any vessel, take out their stalks and keep them in the plate. Now put one spoon of oil in a pan and heat it.


And when the oil is hot, add half a teaspoon of mustard, half a teaspoon of cumin, two or three cloves of garlic, finely chopped green chilies, a little asafetida and temper it.


And let them fry for a while till they are not brown. After frying all this, add finely chopped onion and fry it for a minute or two more.



And when the onion becomes a little crispy, then add finely chopped tomatoes, turmeric powder, coriander powder, chili powder and salt as per taste, add some water and cook on medium heat till it leaves the oil. After leaving the oil till it leaves the oil, now you put the mashed brinjal in it. 


And while mixing with a spoon, add some garam masala to it and tell for 5-6 minutes. Till the water does not dry up and leaves the oil, then you turn off the gas and garnish it by adding finely chopped green coriander.


And now your delicious Brinjal Bharta is ready, serve it and enjoy it with roti or paratha. with your family
